Cooler Corn

This may be something everyone out in blogging world already knows about....but I did not until I received an email from my friend Shirley, via Frank yesterday.  This is about the coolest idea I have ever heard and I will be honest I cannot wait to try it out. It is a simple fact that my family loves corn on the cob. And with a ton of adults....and children at the table, that means several dozen ears.  We would have use the stock pot to cook them all, but the stock pot was busy parboiling whatever meat we are going to grill.  What do you need?  Well the most important item, besides the corn of course is  a Coleman cooler.  Make sure it is wiped clean, then fill it with the shucked ears.   Next, pour two kettles-full of boiling water over the corn and close the.Then nothing.   30 minutes later open the cooler and voile, the corn was perfectly cooked. Does this not blow your mind?  It certainly did mine.   I'm told that the corn will remain at the perfect level of doneness for a couple of hours.  Turns out, Cooler Corn is pretty well known among the outdoorsy set (I found a handful of mentions on various camping websites).  But for those of us who avoid tents as much as possible, it's perfect for large barbecues, eliminates heating the kitchen up, and way less of a mess than grilling it(which I love too).  In fact, I may even buy another cooler while summer stuff is on clearance just for cooler corn.  That way we will be ready for next summer.  I know what I will be bringing to the family cookouts!  I can't wait!
